This is a free work/study program available to Graduates of the 200 hour Yoga Teacher Training program. Apprentice with Kevin and learn how to make Ayurvedic meals according to the Doshas, develop the skills of shopping and budgeting, take Ayurvedic principles classes including hikes in the afternoon and yoga classes (optional) in the evening. Can be applied towards an Ayurvedic Cooking specialization in the IYC 500 Hour Yoga Teacher Certificate worth 100 hours credit. You pay for housing and transportation. Happy Winter Solstice!
Not so many people are familiar with Newgrange, a beautiful megalithic site in Ireland. This huge circular stone structure is estimated to be 5,000 years ol d, older by centuries than Stonehenge, older than the Egyptian pyramids. It was built to receive a shaft of sunlight deep into its central hamber at dawn on winter solstice. A shaft of sunlight shines through the roof box over the entrance and penetrates the passage to light up the chamber. The dramatic event lasts for 17 minutes at dawn from the 19th to the 23rd of December. This year's winter solstice is Thursday December 21st at 5:22pm.

The Ayurvedic Corner
Celery
Celery stalks, a common kitchen and cooking staple, are actually quite exceptional amongst terrestrial plants. They travel well, are quite hardy, and stay fresh and crisp for extended periods of time, even under challenging conditions. Ayurvedically, it has an astringent taste and is cooling in its digestive action. It is dry, rough and light, pacifying pitta and kapha doshas and can be made vata friendly simply by preparing or serving with fats such as ghee or oil.
Nutritionally, celery stalks are a powerhouse. Packed with Vitamin K as well as anti-oxidant vitamin C, celery also contains several other active compounds that promote health, including phalides, which may help lower cholesterol, and coumarins, which may be useful in cancer prevention by preventing free radicals from damaging cells. High in fiber, celery is also rich in electrolytes – potassium, sodium, magnesium and calcium, as well as many other alkaline minerals. In addition, celery contains all eight essential amino acids. A wonderful food for those that are physically active.
Enjoy celery as an excellent addition to soups or salads, mixed and sautéed with other vegetables, with nut butters or seed pates, or as a crudité. Braised Celery is a simple tridoshic recipe based on and excerpted from Miriam Kasin Hospodar’s Ayurvedic cookbook, Heaven’s Banquet. This is a wonderful addition to any holiday menu.
Braised Celery
6 servings
¼ cup ghee (substitute safflower oil for vegans)
12 celery stalks, trimmed on both ends, quartered lengthwise
1 cup vegetable stock
1 TBSP lime juice
2 tsp agave nectar
Black pepper to taste
Heat ghee in a wide, lidded skillet. Add celery and turn to coat on all sides.
Add the stock, lime juice, and agave. Sprinkle with pepper. Bring to a boil, cover, reduce the heat, and simmer until the celery is tender, about 10 minutes or less.
Transfer the celery with a slotted spoon onto a warm serving platter. Turn the heat to high and boil the sauce, stirring frequently, until cooked down to about ¼ cup. Pour over celery. Garnish with fresh herbs that complement the main dish.

Karmas in the Vedic Astrology Chart
There are actually four types of karmas. The first is sanchita karma which is the total collection of karma that has been accumulated from all past actions and past lives.
The second type of karma is called prarabdha karma, and this is the karma that is indicated in one’s Vedic astrological chart. This prarabdha karma is the portion of karma to be experienced by the person in this lifetime, and the horoscope is the blueprint of this karma. The Vedic astrology chart will also show the most likely time when this karma will ripen, through the planetary periods (called dashas), and current planetary transits.
The third type of karma is called kriyamana karma and this is the karma that is created by our current actions. It is what we are creating now, and so to some extent can be labeled our free will. Through our current choices or free will, we can soften or help alleviate some of the challenges we may experience when our prarabdha karma ripens.
Then there is a forth type of karma called agama karma, which is karma of the future, which has yet to be experienced. Envisioning or contemplating what may happen at a future time, if you choose to perform certain actions, is an example of agama karma. With this in mind, it would be most beneficial to visualize positive outcomes for future events – certainly a good reason to practice positive thinking!
